Chroogomphus rutilus, Mushroom

  About Tim & Esther

Chroogomphus rutilus is an edible mushroom found in Europe, North America, the Caribbean and Asia. It is commonly known as Copper spike, pine-spikes or spike-caps, based on its appearance and growing habit in association with pine trees.

The cap is convex to shield shaped, red-brown to olive brown in color and can grow up to 15 cm in diameter, with a small knob. The cap is slimy or sticky when wet. The brownish-orange gills are wide-spaced and decurrent with black to brownish-yellow spores. The stipe is brownish-yellow and tapers towards the base. Its flesh is yellowish to salmon-colored and turns violet when chewed. The taste and smell of Chroogomphus rutilus is somewhat astringent, not flavorful, but it does add texture to the dish.
