Cantharellus tubaeformis, Mushroom

  About Tim & Esther

Cantharellus tubaeformis (Craterellus tubaeformis) is an edible mushroom found growing on moss or rotten wood in spruce forests in northern North America and Europe. It is commonly known as Yellowfoot, Yellow Leg, winter mushroom, or Funnel Chanterelle. It can be found in great number late in mushroom season, from July to October, thus the common name winter mushroom.

Cantharellus tubaeformis is a trumpet-shaped mushroom with wavy-margin dark brown cap, paler gills and a hollow yellow stem. It is smaller than Golden Chanterelle (Cantharellus cibarius), stronger in taste but less in fruity smell.

Cantharellus tubaeformis is an excellent food, either fried or in soups.
